Spiced Kumquat Relish - Batch #01


The sweet and sour notes of kumquats go perfectly with this warm spiced relish. Grown by Food By Fiat in NSW, these delicious little fruit are fermented in a salt brine with ginger and garlic and then blended with Japanese rice wine vinegar, spices and a little brown sugar. Probiotic and wildly fermented this relish has natural lactobacillus and yeasts that combine to give the relish sourness, sweetness and a little umami. It’s got a little bit of pickle flavours but can be likened to a sort of Chinese spiced chutney. Perfect alongside meat or cheese. Store in the fridge because this one is alive and kicking.

Serving Suggestions

Serve alongside a cheese and charcuterie board. Makes a great condiment with roast duck or any rich poultry dish. Shake up with olive oil and a little vinegar to dress your favourite green salad. Use in a marinade for pork or chicken. Or use as you would any chutney!
