Every batch of shrub is made with different seasonal fruit. This one is made with Lemonades and fresh ginger. Lemonades are small sweet lemons, these ones are from Muscat Family Farm, who were devastated by the floods this year. This shrub has a little lingering spice from the ginger and lots of punchy citrus. This is great in soda water for a homemade traditional lemonade style drink or it’s great used as a dressing over oysters or seafood.
The fruit is simply fermented with Australian raw sugar and steeped with local Apple cider vinegar for this zesty drink. Nothing else!

Add to still or fizzy water like a cordial! Serve with soda and a sprig of mint for a great non-alcoholic drink. Or add a dash to a vodka soda to lighten the day. A shrub can be treated like a drink or you can use it in a salad dressing. This one is great over seafood or try mixing with really good quality extra virgin olive oil for a salad dressing.
