Every batch of shrub is made with different seasonal fruit. Cherry is the epitome of Christmas on East Coast Australia. It’s a short season for the fruit which come and go too quickly for many. Preserving cherries is the best way to enjoy all year round.
This shrub is an ode to those Christmas celebrations. This one is made with fresh mixed variety Cherries from Andrew Muscat with a blend of warm spices reminiscent of Chrissy pudding.
The fruit is simply fermented with Australian raw sugar and then steeped with local Apple cider vinegar
Cherries (Andrew Muscat, Wombat, NSW)
Star Anise, Cinnamon, Clove (Imported)
Raw Sugar (CSL, QLD)
Apple Cider Vinegar (Lirah, QLD)
Add to still or fizzy water like a cordial! Serve with soda for a great non-alcoholic drink. Or add a dash to a Manhattan cocktail for a unique twist. A shrub can be treated like a drink or you can use it in a salad dressing. Try with a roast chicken salad with a little olive oil, salt flakes and peppery rocket leaves.
