Every batch of shrub is made with different seasonal fruit. Inspired by those delicious desserts and crumbles, I wanted to make a shrub that was dry and crisp and could be matched with any favourite spirit. Rhubarb actually grows quite prolifically over summer so it was a chance to use that abundance.
This shrub is made with Rhubarb and Ginger sourced solely from Rita’s Farm in Wallacia, NSW. You can find Rita’s produce at Marrickville, Bondi and Kings Cross Farmers Markets,
The fruit is simply fermented with Australian raw sugar and then steeped with local Apple cider vinegar

Add to still or fizzy water like a cordial! Serve with soda and a slice of lime for a great non-alcoholic drink. Or add a dash to gin and tonic for a long refreshing cocktail. A shrub can be treated like a drink or you can use it in a salad dressing. Try with a simple green leafy salad and a little olive oil, salt and pepper.
