Every batch of shrub is made with different seasonal fruit. This batch is strictly limited! Obviously blueberries are not the most cost effective fruit to use for a drink like this.. but I was lucky enough to get my hands on some amazing local berries and I couldn’t resist, but it only made a small quantity!
Why coriander seed you may wonder? Both contain linalool, a flavour compound that has similar floral, citrus, woody qualities and is a key component of synthesised blueberry flavour. So you may not taste the coriander seed, but it adds to the depth of flavour.
The fruit is simply fermented with Australian raw sugar and then steeped with local Apple cider vinegar.

Add to still or fizzy water like a cordial! Serve with soda or ginger ale for a twist. Or add a dash to a dark and stormy, a delicious combo! A shrub can be treated like a drink or you can use it in a salad dressing. This one is great over a warm roasted summer veggie salad, wth feta and rocket.
