Every batch of shrub is made with different seasonal fruit. This one is a celebration of summer! I was able to take advantage of the strange spring weather and source the last of limes and the first of the watermelons from different growers. This shrub is zesty fresh and full of lime flavour with a rounded sweetness from the watermelon. It will make great summer punches!
The fruit is simply fermented with Australian raw sugar and then steeped with local Apple cider vinegar

Add to still or fizzy water like a cordial! Serve with soda and a slice of lime for a great non-alcoholic drink. Or add a dash to a vodka and tonic for a long refreshing cocktail. A shrub can be treated like a drink or you can use it in a salad dressing. Try with olive oil over kingfish carpaccio with a little olive oil, salt flakes and peppery rocket leaves.
