Every batch of shrub is made with different seasonal fruit. This one is made with bergamot, a bitter sour citrus fruit. You’re probably familiar with bergamot as it’s used in earl grey tea. However, this floral citrus fruit should be much more well known beyond tea and perfume. Read more about this fruit on my Blog Post. The bergamot for this shrub was sourced from Fiat from his NSW based farm. He grows amazing varieties of citrus including the much celebrated yuzu! Finding fresh bergamot in Aus is a special treat but also it brings a little of southern Italy to our winters which is pure love!
The fruit is simply fermented with Australian raw sugar and steeped with local Apple cider vinegar for this zesty drink. Nothing else!

Add to still or fizzy water like a cordial! Serve with soda and a slice of grapefruit for a great non-alcoholic drink. Or add a dash to a vodka soda. A shrub can be treated like a drink or you can use it in a salad dressing. This one is great over a salad with sliced oranges, olives, red onion and radicchio and a really good quality extra virgin olive oil.
