Every batch of shrub is made with different seasonal fruit. This one is made with local Persimmon or fuyu. The sweet richness of persimmon needed an edge so whole limes and whole black peppercorns were added to the mix. This combination is a great winter warmer and brings a little Autumn warmth into a cold winter kitchen. The fruit is then fermented with Australian raw sugar and steeped with local Apple cider vinegar. Nothing else!
Persimmon (Sift product, Orange NSW)
Limes (Muscat Farm, Lower Hawkesbury, NSW)
Black Peppercorns (Vietnam)
Raw Sugar (CSL, QLD)
Apple Cider Vinegar (Lirah, QLD)
Add to still or fizzy water like a cordial! Serve with soda and a slice of lime for a great non-alcoholic drink. This one would be good served with boiling water and ginger for a winter warmer. Try adding to a dry ginger beer. Or add a dash to a whisky sour. A shrub can be treated like a drink or you can use it in a salad dressing. Try it over a feta & roast pumpkin salad!
