Every batch of shrub is made with different seasonal fruit. This one is made with yuzu, a Japanese variety of citrus that tastes a little like a cross between lime and mandarin with a pithy bitterness. If you’ve never tried it before, you’ll soon become addicted to it and will seek the flavour out! The yuzu for this shrub was sourced from Epicurean Harvest, NSW. NSW grown yuzu is a special treat! The fruit is then fermented with Australian raw sugar and steeped with local Apple cider vinegar. Nothing else!

Add to still or fizzy water like a cordial! Serve with soda and a slice of lime for a great non-alcoholic drink. Or add a dash to a whisky sour. A shrub can be treated like a drink or you can use it in a salad dressing. This one is great over a crispy cabbage salad with cucumber and sesame.
